Quince and Orange Cake Recipe
Here's a super simple recipe to help you enjoy serviceberries, or to use up your excess foraged serviceberries! 😉
Ingredients:
1 ½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
1 cup unsalted softened butter
¾ cup maple sugar
2 eggs
1 teaspoon vanilla extract
1 large Navel orange (for zest and juice)
1 cup fresh or frozen serviceberries
½ cup chopped white chocolate
¼ cup powdered sugar
Cake Preparation:
- Preheat the oven to 350°F
- Grease a loaf pan
- In a bowl, combine the flour, salt, baking powder, and orange zest
- Using an electric stand mixer or hand mixer, beat the butter and maple sugar until smooth and fully combined
- Add the eggs and beat until light and fluffy
- Add the dry ingredients
- Gently fold in the serviceberries and orange juice
- Mix thoroughly and pour the batter into the prepared loaf pan
- Bake for approximately 60 minutes, or until a toothpick inserted into the center comes out clean
For the Glaze:
- Measure 3 tablespoons of orange juice (or the juice from your orange)
- Add the powdered sugar
- Stir everything together and pour over the warm, freshly baked cake
Serve once cooled with a dollop of maple syrup-sweetened whipped cream! 😉
