Blueberry-Lemon Cake Recipe

Ingredients:
1 œ cups all-purpose flour
œ teaspoon salt
œ teaspoon baking powder
1 cup unsalted butter, softened
Ÿ cup maple sugar
2 eggs
1 teaspoon vanilla extract
œ cup milk
Zest of 1 lemon
Juice of 1 lemon
1 cup fresh or frozen blueberries
Cake Preparation:
- Preheat oven to 350°F
- Grease a loaf pan
- In a medium bowl, whisk together the flour, salt, baking powder, and lemon zest.
- Using an electric mixer or stand mixer, beat the butter and maple sugar until smooth and combined
- Add the eggs and beat until light and fluffy
- Add the dry ingredients alternately with the milk.
- Gently fold in the blueberries and lemon juice.
- Mix well and pour the batter into the prepared loaf pan
- Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean
For the Glaze:
- Add the juice of 1 lemon.
- Add Œ cup powdered sugar.
- Stir together until smooth, then pour over the warm, freshly baked cake
